Food Safety
This training programme is for people working or preparing to work in a food business. It is a comprehensive introduction to the principles and rules of food safety. Topics include personal hygiene, cleaning procedures, food-handling practices and the causes of food-borne illnesses.

This training programme was developed to cover the following NZQA standards:
- Unit 167, Practise food safety methods in a food business
- Unit 20666, Demonstrate a basic knowledge of contamination hazards and control methods used in a food business
The training programme includes an extensive hard copy manual and additional online resources. Each online module closes with a formative quiz and a printable summary.

This training is for people working or preparing to work in a food business. No previous academic qualification is necessary, though NCEA 1 or equivalent is preferred.

The assessment is based on the following NZQA standards:
- Unit 167, Practise food safety methods in a food business
- Unit 20666, Demonstrate a basic knowledge of contamination hazards and control methods used in a food business
There are three parts to the assessment: a closed-book written test and two practical sessions with an assessor. The written part of the assessment is to be completed in the presence of the assessor at the first practical session.
To sit your assessment, you will need to:
- ensure you have access to a commercial food preparation area
- contact an assessor and arrange a time for your assessment
- bring appropriate kitchen utensils
- bring your assessment voucher
- bring a copy of your enrolment form
- bring a certified copy of an approved form of identification
The approved forms of identification are as follows:
- a birth certificate with the place of birth stated as New Zealand, the Cook Islands, Tokelau or Niue
- a current New Zealand passport
- a current overseas passport with a residency stamp
- a certificate of citizenship
We also require a certified copy of your marriage certificate if your current name is different from that on your birth certificate.
Please note that “certified” means a photocopy of the original document signed by a Justice of the Peace (JP) or a solicitor as being a true and accurate copy. You can find a list of Justices of the Peace in the yellow pages of the telephone book.
When you are ready to sit the assessment, contact one of our assessors listed in the learning centre to arrange a time for your assessment. Please note the following:
- We currently only offer assessment in the Taranaki region.
- Some of our assessors are only able to assess in HSI-registered workplaces. Your employer should be able to tell you if your workplace is registered with HSI.
- You must be assessed in a commercial food preparation area, such as a cafe or restaurant kitchen. Normally this will be your own workplace, but if this is not available you will need to find another suitable location.

Each module is designed to take between one and three hours. The estimated time to complete the training is around 20 hours. You have four months to complete the training and the assessment. The programme is structured so that you can move through the materials at your own pace within the set time frame.

The cost is NZD320.00 (incl. GST). This includes the cost of the assessment.
